Week of August 12
My dear Community,
I hear whispers of school starting and feel the days getting shorter, but I’m still hanging on to every last bit of summer. There’s just something about the warm, sunny days and all the fresh, vibrant produce that makes me want to stretch this season out as long as possible. Luckily, we get to enjoy a little extra summer magic. Our growing season doesn’t quit when the calendar says it should—tomatoes stick around until December! So, while fall feels like it's peeking around the corner, I’m not saying goodbye to summer just yet.
I hope you're finding creative ways to use zucchini as this vegetable can be used for savory or sweet creations. I made a really yummy zucchini brownie and grated it into some chili and my kiddos never the wiser. Zucchini is a low-calorie, fiber-rich veggie that’s as versatile as it is nutritious. Packed with antioxidants and vitamins, it supports heart health, aids digestion, and even boosts your immune system. Plus, with its high water content, it’s a great way to stay hydrated while enjoying a delicious, healthy meal. Whether you’re grilling, roasting, zoodling, or tossing it into a salad, zucchini is a summer staple that’s good for your body and easy to love.
We're waiting for a new crop of corn to ripen, but we're still loaded with strawberries, blackberries, cantaloupe and more.
We just moved our sheep and goats into an old artichoke patch to clear the weeds and leave better soil behind in their wake. I'll post some pictures of them romping around the fields living their best lives on our IG account this coming week. It feels like such a symbiotic way to farm when animals are included in the mix.

Easy Zucchini Salad
Ingredients:
2 tablespoons extra virgin olive oil
1 tablespoon lemon juice
1 teaspoon Dijon mustard
½ teaspoon honey
Pinch of salt and pepper
2 medium zucchini shaved into ribbons
1 cup ricotta cheese
Lemon zest for serving
Fresh basil for serving

Almond Flour Zucchini Muffins Recipe
Ingredients:
1 ½ cups Shredded Zucchini, (255 gr)
Dry Ingredients:
2 cups almond flour or almond meal, (240 gr)
1 teaspoon baking soda
½ teaspoon kosher salt
½ teaspoon ground cinnamon
Wet Ingredients:
2 large eggs, at room temperature
¼ cup grapeseed or coconut oil, melted and cooled
½ cup coconut sugar, (66gr)
1 teaspoon vanilla extract
